My wife liked the glow worm caves and Sydney Harbor bridge climb best.  The kids liked the Sydney bike ride and Wildlife tours.

I liked the dinner at Ayers Rock- Sounds of Silence.  The camel ride was a nice touch, but for me, a little long.

I have to admit that I was looking forward most to the Great Barrier Reef Snorkel trip, which was underwhelming, but not because we weren't on the best boat with the best crew.  It just wasn't better than Jamaica or Costa Rica or Thailand.  The  company said a dive there would CHANGE YOUR LIFE, which was a significant oversell.
