I would have stayed within a region rather than spending hours traveling from Rome to the South and back again.   Book shorter tours with abbreviated explanations of each place.  I would research the Hotels and pick the ones I feel meet my needs.  Found more beaches and restaurants on the water.  At least find a hotel with a pool.  We were so excited to hear Positano had a pool (so small, it could have been a hot tub and not clean).  We did not get to spend time at a beach, which was a little disappointing.  All in all, I would not book so much into one trip.  Restaurant recommendations, as well as nice places to shop and things to see suggested by the travel agent would be extremely helpful.  We did received some recommendations and the restaurants were good.
