Hard to pick any one experience. We very much wanted to try and have an active vacation, and spend time with Italians -- I know that second point seems a strange thing to say BUT I think it would be easy to travel in Italy and only connect with other tourists. Our agent understood we wanted authentic experiences, and delivered even in heavily touristy Firenza and Venezia.  A shout out to our Dolomites guide and his adventure company base in Verona. We had an amazing 3 day trek  -- not for the casual hiker but well worth the 8-10 mile days. Being a Colorado high country lover, the Italian Alps within the Dolomites are spectacular. I highly recommend you make time to travel to this breathtaking location -- many options besides trekking are available to experience this UNESCO World Hertitage area.
